It’s time for another What I Ate Wednesday!
So a round up of what I ate yesterday….
Notice the prominence of the coffee? ummm…. the most important meal of my day. No?
Breakfast: A long forgotten favourite. I discovered the trick of using avocado on my morning toast instead of cheese several years ago. Sprinkle of salt, fresh tomato. Yep, just about the best way to start the day.
Coffee: of course X 2 (or 3). With French Vanilla Silk creamer, just because
Snack #1: Lara Bar – coconut cream
Lunch: Leftovers of the most ingenious meal I’ve ever made. A good friend told me about roasting veggies (which I do all the time) and throwing in a can of chickpeas. Slow roasted, those chickpeas get crispy and crunchy. I honestly can’t believe I’ve never done that before. Who knew? Besides chickpeas, I roasted carrots, sweet potato, peppers, cherry tomatoes. Served with half a pita.
Snack #2: sticks.
Dinner: Enchilada Bake from 350 Best Vegan Recipes. A new book, stay tuned for the review and recipe. Soon, I promise. This was completely vegan and completely delicious.
Oh… today’s workout? Well, how about yesterday’s?
A 30 minute run. My Garmin was dead, my Ipod died 5 minutes in. But still it was the best run in a long time. I actually enjoyed it.
