These yummy squares make the perfect take along for a potluck.
And in case you wondered… you’ve found yourself at the dessert table. The best place to find yourself when at a party, in my humble opinion.
Here’s what I’m bringing….
Oats and Dates – what can I say? Classic. Hearty and Sweet. The applesauce lightens up the crust/cookie part of this square without sacrificing any flavour.
- 1 cup pitted dates, chopped
- 1 cup water
- 1/2 cup sugar
- 1 teaspoon vanilla
- 1 teaspoon lemon juice
For the filling: Place all ingredients in a small sauce pan and bring to a boil over medium high heat. Reduce heat to a simmer and simmer gently for about 15 minutes. You want the dates thick and syrupy.
- 1 cup flour
- 2 cups rolled oats
- 2/3 cups sugar
- 1/2 cup wheat bran
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- pinch of nutmeg
- 1/2 teaspoon cinnamon
- 1/2 cup margarine, (Earth Balance)
- 1/2 cup applesauce
Preheat oven to 350. In a large bowl mix dry ingredients (flour through cinnamon). Add margarine and applesauce and mix until well combined. Use your hands to get the oats all sticky.
In a 8 x 8 greased baking dish, push half the batter into the dish. Lightly wet your fingers – it will make it easier to spread it into the corners.
Spoon the date filling on top of the batter and spread lightly with the back of the spoon.
Push the remaining batter into clumps on top of the filling. Covering as much of the filling as possible.
Bake at 350 for 20-25 minutes or until top is golden brown.
Allow to cool completely before slicing into squares.
