This is our favourite oatmeal recipe, and my favourite because I can make it the night before.  Slow-Cooked Oats with Apples and dates and walnuts. And it is seriously the best. Use steel-cut oats. Rolled oats will not work. Don’t even try.

Slow-Cooked Oats with Apples and Dates

Ingredients:

  • 1-1/2 cups steel cut oats (not rolled)
  • 2 cups soy milk – vanilla soy milk is very good
  • 4 cups water
  • 5 dates sliced
  • 1 to 2 apples peeled, cored and diced
  • pinch of salt
  • 1 teaspoon cinnamon
  • 1/4 cup chopped walnuts
  • 2 Tablespoons wheat germ

Directions:

Spray slow-cooker insert with cooking spray and then add the remaining ingredients. Set the slowcooker for 5-6 hours on low.
Turn this on just before bed (or if you are lucky enough to get (still have!!) a crockpot that has a delay timer, use that to start around midnight and go to bed early). My machine will keep warm for another 4 hours.

We serve with a bit more soy and brown sugar on top.
Leftovers are good warmed up the next day. Again add more milk to loosen it up a bit.
