What is better than chocolate chips and peanut butter? Perhaps when they are baked together into something cake like?
I’m a sucker for chocolate and peanut butter. These little cakes have no “added” sugar. Now I did not say sugar-free…. I said no added sugar. A bit of sweetened yogurt and a mashed up banana are all you need. And some good chocolate!
Peanut butter and chocolate chip banana cakes
- 1 cup all-purpose flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/4 cup peanut butter
- 1 cup mashed bananas
- 1/4 cup vanilla flavoured sweetened yogurt
- 1 large egg
- 1/2 cup peanuts, chopped
- 1 cup chocolate chips, melted
Preheat oven to 350 and prepare 8in square baking dish.
Combine flour, baking powder and baking soda. In a large bowl beat together peanut butter, banana and yogurt until smooth. Beat in the egg until completely incorporated.
Gradually add in the dry ingredients until just combined. Gently fold in the peanuts.
In your baking dish spoon 1/3 – 1/2 of the batter in the bottom of the dish. Add spoonfuls of the melted chocolate in mounds on top. Continue alternating between the remaining batter and the chocolate until both are all used. You can swirl a bit if you feel like it.
Bake 20-25 mins or until the cake is lightly browned around the edges and springy to the touch. Cool in the pan on a wire rack completely….. or until the chocolate is cool enough to not burn the top of your mouth.
