I’ve come to realize I am a pretty bad photographer. My pictures are certainly not professional, but that is not my problem. My problem is I can’t cook and take pictures at the same time. Maybe I’m just disorganized? This is possible… I know my husband would agree.
So, here I am, all excited to share this recipe with you and I am just now realizing I don’t have a pictures of the final product of this yummy and very pretty salsa. It was beautiful all yellow and green with flecks of red. All I have the picture below….
My humble apologies. I suggest you make this even through you don’t know what it will look like when you are done — I promise it is very pretty. I also promise to be better with my pics.
Summer in a bowl…..
Mango and avocado salsa
- 1 ripe mango, peeled, soft parts diced
- 1 avocado, peeled, pitted and diced
- 1/2 red pepper diced
- 1/4 cup diced red onion
- 1/4 cup finely chopped cilantro
- 1-2 tsp agave nectar (depends on how sweet you like it and how sweet your mango is)
- Juice from half a lime
- salt to taste
Chilli pepper would be a nice addition if you want a little heat. I would add 1/2 – 1 full tsp of crushed chilli flakes. The sweetness of the mango would definitely benefit from it. However, I’m cooking for the kids so I keep this one mild and sweet.
