We can all use a good green smoothie once in a while, well actually its a good idea all the time.  After those last few posts I am feeling a bit like I have let things get out of control, things are running wild; we are baking with abandon.  I’m finding myself with an intense craving for something green, but also sweet and creamy.  This is a sweet smoothie – a bit sweeter than I would have for breakfast normally.  The spices remind me of a Chai Latte making it feel a bit indulgent.

I recently purchased a Ninja Professional blender. My little Oster gave up a few months ago.  The Ninja was only $80 so I’m not totally disappointed.  But regretfully I am  bit angry at myself for not holding out for the mother of all blenders – a Vitamix.  I just could not fork over the $400 for one.  Sigh… the Ninja is fast and it is high-powered but it leaves my green smoothies looking like pesto when Kale is involved.  Spinach works alright.  Being the practical girl that I am, a Vitamix is likely out of the question until the Ninja dies.  (Hopefully it doesn’t last as long as the Oster did – like 13 years.)

So here is my back to basic’s smoothie, I’m resisting the urge to call it “Green Almond Pesto Smoothie” but the name is available if you want it.

Feeling a little indulgent lately...? vegan smoothie healthy green

Green almond bliss

  • 3/4 cups kale leaves, washed, stems removed and lightly packed
  • 1 frozen banana
  • 3/4 – 1 cup almond milk
  • 3-4 ice cubes
  • 1 Tbsp almond butter or other nut butter
  • pinch / dash / shake of cinnamon, ginger and nutmeg

Throw it all into your blender and blend until smooth and creamy.  Enjoy!
