I wanted to take this opportunity to tell you about some of my favourite vegan cookbooks. These are the books that I reach for all the time. The books I use to feed the family.
What I do like to have in my freezer are single serve things. Things that I can grab on my way out the door when I don’t have time to put together a lunch for myself. Because a day without lunch is just not a good day.
Everyone needs a recipe like this in their life. A new cookbook from Cupcakes and Kale author Jessica Nadel and a recipe for her Mediterranean Broccoli and Barley Salad.
This is food that the whole family will enjoy. What I really liked about this book is Rinku’s focus on sustainability and how a family can work towards a healthier and greener lifestyle with delicious food. And, although not exclusively a vegetarian cookbook, many of the recipes are meat-free and many are also vegan. Perfect for those who are trying to go meat-free once in a while.
This Zucchini, Lemon Thyme and Onion flatbread from Rinku Bhattacharya’s “Spices & Seaons” was something I just had to try. I love the idea of using pureed zucchini in the dough. Soon enough we will all have too many zucchini’s to deal with and finding something new to do with zucchini is always on my to-do list.
A simple formula – protein, milk, and fruit – makes a balanced breakfast that will fuel even the busiest morning.
